FootFall Menus - 2009

Here is our tentative menu for the weekend. Please note that it is subject to change, but we think any changes will be minor. We want you to have advance notice, to allow for allergy issues, etc. There is a campers' refrigerator in the Dining Hall, which is accessible all day. The salad bar, which will be available at both lunch and dinner, is well stocked with cheeses, tuna, orzo, black beans, carrots, red and green peppers, tomatoes, tofu, and more – plus about half a dozen dressings.

Coffee and hot water for tea or cocoa will be available all day, as will ice water. Additional beverages will include juice for breakfast, and lemonade and iced tea at lunch and dinner.

Friday dinner

Baked salmon w/ fresh herbs
Parsley potatoes
Broccoli
Salad bar
Apple crumble
Vegetarian fare:
Cauliflower, Potato, and Lentils (Aloo Gobi w/Lentils),
served with Basmati Rice (Vegetarians may also have broccoli)

For late arrivals:
Sliced turkey breast, sliced cheese, PB&J,
bread, yogurt, cookies and carrots.

 

Saturday dinner

Roast chicken or roast turkey
Dressing and gravy
Baked quartered red and sweet potatoes
Fresh Green beans
Salad bar
Chocolate chip pancakes with fruit and whipped topping.
Vegetarian fare:
Cheesy Grits Casserole w/ black beans and summer vegetables
(Vegetarians may also have green beans)

Friday After Dance Snack

Cheese, nuts, fruit, chocolate, and pretzels / chips.

 

Saturday After Dance Snack

Cheese, nuts, fruit, chocolate, and pretzels / chips.

Saturday breakfast

Waffles with fruit
Sausage (pork and vegetarian)
Eggs (probably hard-cooked or poached)
Hot and cold cereals
Yogurt

Sunday breakfast

Scrambled eggs
Lox and bagels
Hot and cold cereals
Yogurt
Fruit

Saturday lunch

Quiche -- spinach, cheese, or broccoli
Chicken salad
Apple/nut/celery salad with soy dressing
Salad bar
Sherbet

 

Sunday lunch

Burgers -- beef, chicken, or veggie -- plus condiments
Zucchini and summer squash
Rice and beans
Salad bar
